Apricot-Almond Arugula Salad
8 ounces arugula
1/4 cup dried apricots, chopped
1/4 cup almonds, sliced
2 Tbs Harvest Persian Lime Olive Oil
2 Tbs Harvest Blenheim Apricot White Balsamic Vinegar
Mix Olive Oil and Balsamic Vinegar and drizzle over arugula. Top with apricots and almonds, toss to combine, and serve.
