Baked Balsamic Chicken


4 boneless, skinless chicken breasts

½ small onion, diced

¼ cup Harvest Neapolitan Herb Balsamic Vinegar

1 Tbsp. Harvest Tuscan Herb Olive Oil

1 Tbsp. Oregano

1 Tbsp. Rosemary

Salt and pepper, to taste


You can marinate the chicken overnight, or make it as is.

Combine all ingredients and pour over chicken. If marinating overnight, put all ingredients with chicken in Ziploc bag and massage to coat chicken. Preheat oven to 400 degrees. Place the chicken in a glass dish and pour excess marinade over top. Bake 30-40 minutes, depending on thickness of chicken.

Note: You can also use bone-in chicken, but be sure to allow an additional 15-20 minutes of cooking time.
