Heat oven to 475 degrees and lightly oil a baking sheet. Slice zucchini into eighths lengthwise, then halves crosswise. In a wide, shallow bowl, combine breadcrumbs, Parmesan, garlic powder, and red pepper flakes.
Drizzle zucchini spears with the Olive Oil and roll to coat. Roll oiled spears in the crumb mixture, making sure to cover all sides. Arrange on prepared baking sheet and bake 7 minutes, or until spears are lightly browned. Turn spears over and bake 3 minutes more. Adjust seasoning as necessary and serve.
