Balsamic Glazed Pork Tenderloin

Products Used:

Balsamic Glazed Pork Tenderloin

2 pork tenderloins (about 1 1/4 lbs. each)

3 Tbs brown sugar

3 Tbs Harvest Vermont Maple Balsamic Vinegar

3 Tbs Harvest Chipotle Olive Oil, divided

Salt & pepper to taste

Preheat oven to 400 degrees and line a baking dish with aluminum foil. Pat pork dry with paper towels; press the brown sugar into the meat and season with salt and pepper.

In a small bowl, mix together 2 Tbs of the Olive Oil with the Balsamic Vinegar. Heat remaining Tbs of Oil in a large skillet over high. Once hot, add tenderloins to the pan and spoon about 1 Tbs of Oil and Vinegar mixture over each piece. Sear for 2 minutes on each side before transfering tenderloins to a baking dish. Spoon the remaining Oil and Vinegar mixture over the tenderloins, as well as any drippings from the pan.

Roast pork until a thermometer inserted into the middle of the meat reads 160 degrees, 20-30 minutes. Remove from the oven, tent with foil, and let rest for 10 minutes. Slice, adjust seasoning as necessary, and serve.
