3 tbsp. Harvest Sicilian Lemon Balsamic Vinegar

3 tbsp. Harvest Basil Olive Oil

4 cloves garlic cloves (medium, minced)

1 tbsp. fresh oregano leaves (chopped)

1 tsp. rosemary (chopped)

1/2 tsp. kosher salt

1/4 tsp. black pepper

2 medium zucchini cut into 1-in chunks

2 medium eggplant cut into 1-in chunks

2 cups grape tomatoes

2 tbsp. basil (fresh, chopped)


Toss all ingredients together and roast for 30 minutes at 400 degrees, stirring occasionally.
