Pulse the first four ingredients in a food processor, blender, or with an immersion blender. Slowly — one drop at a time — add Olive Oil while blender is running, mixing well between each addition. Once the mixture begins to thicken, you can begin to pour Olive Oil slowly in a thin, steady stream. Continue until all Oil is used and the mixture is thick and properly emulsified.
* If using an unflavored Olive Oil, make sure it is very mild with minimal bitterness; consider using the Spring '18 Arbequina from Chile, for example. Flavored Oils are a wonderful way to customize the flavor of your mayonnaise, too. We love Wild Dill, Baklouti Green Chili, and Harissa, but we encourage you to experiment and find your own favorite!
