Beer BBQ Sauce


2 Tbs Harvest mild Ultra Premium Olive Oil

1/2 medium yellow onion, diced small

2 cloves garlic, minced

1 can PBR (or similar American lager)

1 (16-oz) can tomatoes and their juices

1/2 tsp cayenne

1/2 tsp red pepper flakes

1/2 cup brown sugar

2 Tbs Harvest Gravenstein Apple White Balsamic Vinegar

1 Tbs Harvest Red Barrel-Aged Wine Vinegar

Pinch of cumin


Heat Olive Oil in a saucepan over medium-high heat until it just begins to smoke. Add onion and garlic and sautee for 2 minutes, stirring briskly to keep garlic from burning. Deglaze pan with half the beer; save remainder for another use. Reduce by half, about 5-7 minutes, before stirring in remaining ingredients. Reduce heat to medium-low and simmer for 30 minutes. (If using whole tomatoes, smash them with the back of a wooden spoon or a potato masher to help them break down.) Remove from heat, let cool, and blend until smooth. Season to taste and serve.

Serving suggestion: This sweet-and-spicy BBQ sauce is wonderful on smoky grilled chicken; thin out some of the sauce with an equal amount of water and baste chicken repeatedly during its last few minutes on the grill to create an amazing glaze. Pass undiluted sauce at the table.
