Chicago Style Italian Beef


1 onion, sliced

1 (14 oz.) can beef broth

1-4 lbs. boneless beef roast, trimmed

2 Tbsps. Harvest Traditional Balsamic Vinegar

½ cup Harvest Tuscan Herb Olive Oil

Salt and Pepper, dash of each

2 green peppers, sliced (if desired)


Place sliced onions and broth in slow cooker. Brush beef with Harvest Traditional Balsamic Vinegar. Put roast in slow cooker. Sprinkle with salt-pepper. Drizzle Harvest Tuscan Herb Olive Oil over roast. Cook on low 8-10 hours. If desired the last 2 hours of cooking, place green pepper strips in slow cooker. Shred beef and serve with cups of broth made from the cooking process.
