Chili Lime Sweet Corn Salad

Chili Lime Sweet Corn Salad

Ingredients:

4-6 ears of corn, cooked and cut off the cob (use whatever amount of corn you like--you can always adjust the oil/seasoning to taste)

1 T Harvest Cilantro & Roasted Onion Olive Oil

1 T Harvest Persian Lime Olive Oil

1/2 tsp. chili powder

1 T chopped cilantro

1/2 c crumbled queso fresco (you can use feta here as well)

salt, to taste

 

 

Directions:

Mix all ingredients together and add salt to taste. Serve at room temperature or refrigerate to chill before serving.
