For Cookies:
3/4 cup Harvest Blood Orange Olive Oil
1 cup white sugar
1 egg
2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1/2 cup dried cranberries, roughly chopped
1 Tbs orange zest
For Rolling Sugar:
1/2 cup white sugar
1 Tbs orange zest
Preheat oven to 350 degrees and line a baking sheet with parchment paper. Using electric mixer, mix oil and 1 cup sugar in a medium bowl until light and fluffy. Add egg and stir to combine. In a separate bowl, combine flour, baking powder, and baking soda. Add oil mixture and mix until just combined. Fold in cranberries and 1 Tbs orange zest; cover and refrigerate 10 minutes.
Meanwhile, make rolling sugar: In a small bowl, combine 1/2 cup sugar and 1 Tbs orange zest. Use your fingers to rub the two together until mixture is combined and fragrant.
Shape cookie dough into 1-inch balls and roll in orange sugar. Place on prepared baking sheet and flatten slightly. Bake 10-13 minutes, until lightly golden brown. Cool on a rack before serving.
