Core apples and cut into large chunks. Put chunks in a large, heavy saucepan or Dutch oven with cinnamon, sugar, Cranberry-Pear Balsamic, and 1/2 cup of water. Stir to combine, and bring mixture to a brisk simmer over medium-high heat.
Reduce heat to medium-low, cover, and simmer for 15 minutes or until apples are soft. Remove and discard cinnamon stick. Mash apples with a potato masher or wooden spoon, depending on desired consistency.
Serve warm, at room temperature, or chilled.
