Grate zucchini or summer squash, season with salt, and set aside in a colander to drain. After 5-10 minutes, heat Olive Oil in a large skillet over medium. Add minced garlic and sautee, stirring, until fragrant, about a minute. Add drained zucchini, stir to coat with oil and garlic, and press down into an even layer with the back of a spatula. Cook a few minutes, just until zucchini is starting to turn golden-brown on the bottom; turn zucchini and press back into an even layer. Add more Oil if necessary and continue to cook until soft. Season as desired and serve.
