Edamame & Penne Salad with Feta
Products Used:
4 oz whole-grain penne pasta
2 cups frozen shelled edamame, thawed
1/2 (15.5-oz) can no-salt black beans, drained & rinsed
1/2 cup green onions, white and green parts, chopped
2 Tbs parsley, chopped
1 Tbs lemon zest
2 Tbs lemon juice (or substitute Harvest Sicilian Lemon White Balsamic Vinegar)
1 Tbs Harvest Ultra Premium Olive Oil
2 tsp fresh rosemary, finely chopped (1/2 tsp dried)
2 cloves garlic, minced
3 oz feta cheese, crumbled
Salt & pepper to taste
Bring a large pot of heavily salted water to boil, and prepare pasta according to package instructions. Drain, and rinse under cold water.
Combine all remaining ingredients except feta in a medium bowl. Toss pasta with edamame mix, and gently fold in feta cheese. Adjust seasoning if desired -- a squeeze of fresh lemon juice is lovely, if desired -- and serve.
