Tropical Pineapple Salsa


1/2 cup yellow or sweet onion, chopped

1 cup bell pepper, chopped (a mixture of colors is nice)

1 jalapeño, seeded if desired & chopped

1 clove garlic, minced

1 cup + 1/2 cup chopped pineapple, divided

1/4 cup Harvest Alfoos Mango White Balsamic Vinegar

3 Tbs Harvest Persian Lime Olive Oil

1/2 cup cilantro, chopped


Place onion, peppers, garlic, and 1 cup pineapple in food processor and pulse until combined and finely chopped. Transfer to a medium bowl, drizzle mixture with Balsamic and Olive Oil, and stir to combine. Finely dice the remaining ½ cup pineapple and the cilantro, and stir into salsa. Chill at least 1 hour to allow flavors to blend.

Serving suggestion: This salsa is great with tortilla chips, or consider serving it alongside grilled chicken, pork, or seafood.
