Green Chili Cast-Iron Cornbread

Green Chili Cast-Iron Cornbread


1 1/4 cup cornmeal

3/4 cup all-purpose flour

1/4 cup white sugar

1 tsp kosher salt

2 tsp baking powder

1/2 tsp baking soda

1/3 cup whole milk

1 cup buttermilk

2 eggs, lightly beaten

1/4 cup Harvest Baklouti Green Chili Olive Oil, plus extra for greasing skillet

1/2 cup finely chopped sweet or hot chili peppers (optional)

1/2 cup shredded cheddar (optional)


Heat oven to 425 degrees and place a medium cast-iron skillet inside to heat while you prepare the bread.

In a bowl, whisk together cornmeal, flour, sugar, baking powder and soda, and salt. Mix in milk, buttermilk, eggs, and Baklouti Olive Oil. Gently fold in chilis and cheddar, if using.

Remove hot skillet from the oven--be careful, it'll be hot--and reduce heat to 375 degrees. Prepare the bottom and sides of the skillet with the extra oil, wiping away the excess. Pour batter in and place skillet in the center of the oven. Bake until the center is firm and a toothpick inserted into the center comes out clean, 20-25 minutes. Allow to cool slightly before serving.
