Greens, Eggs, and Ham

Greens, Eggs, and Ham


4 eggs, preferably farm-fresh

6 oz pancetta

10 oz (approximately) greens of your choice (Arugula, Spinach, Kale, Mustard, etc.)

1 Tbs garlic, minced

Harvest Butter Olive Oil, for cooking. (Any other flavor will work nicely, as well.)

Harvest Baklouti Green Chili Olive Oil, for cooking

Salt and pepper, to taste


Heat Butter Olive Oil in pan over medium heat. Add garlic and gently stir for 2-3 minutes; don't let garlic burn. Add pancetta and heat through. Add greens and cook to desired consistency. Season to taste with salt and pepper.

While greens are cooking, drizzle Baklouti Green Chili Olive Oil in separate pan. Crack eggs into pan and fry to desired doneness. Season to taste with salt and pepper. Serve eggs over pancetta and greens.
