Jamaican Jerk Chicken


8 chicken thighs, bone in, skin on

1 tsp. coriander

1 tsp. allspice

1 Tbsp. thyme

2 tsp. salt

1 Tbsp. brown sugar

1 Tbsp. Serrano Honey Vinegar

3 green onions

3 Tbsp. Ultra Premium Olive Oil*

2 Tbsp. Soy Sauce

Zest of 2 limes

1 Tbsp. Gravenstein Apple White Balsamic

2 Tbsp. ginger

3 cloves garlic


Mix all ingredients together until almost smooth. Place the chicken in a large Ziploc bag with marinade. Coat evenly. Leave to marinate at least 30 minutes. I like to leave it overnight when possible.

When ready to cook, preheat the oven to 425 degrees. Line broiler pan with foil (for easier clean up), do not line the top as you want the fat to drain properly. Remove chicken from marinade and place pieces on top section of broiler pan. Bake for 45 minutes.
