In bowl, whisk together soy sauce, honey, garlic, ginger, Sesame Oil, and Sriracha. Pour over pork chops and let marinate for at least 20 minutes.
When ready to cook, remove pork chops from marinade and reserve sauce. Heat Olive Oil in a skillet over medium-high heat. Add pork chops, without marinade, and cook on one side for about 5 minutes, until deeply browned. Flip the chops and pour remaining marinade over; bring to a simmer and cook for another 5 minutes. Reduce heat to low, cover, and cook another 5-10 more minutes until a meat thermometer inserted into the middle of a chop reads 165 degrees.
Serving suggestions: These chops are lovely alongside some white rice or our Simple Sesame Noodles (recipe here); it's never a bad idea to have some Kimchi Slaw (recipe here) or Honey Ginger/Sesame Quick Pickles (recipe here) on hand, either.
