Maple-Chipotle Roasted Cauliflower

Ingredients:

1 head cauliflower, cut into bite-sized pieces

1 Tbs garlic, minced

2 1/2 Tbs Harvest Chipotle Olive Oil*

2 1/2 Tbs Harvest Vermont Maple Balsamic Vinegar

Salt and pepper, to taste

Directions:

Preheat oven to 425 degrees and line a baking sheet with aluminum foil. Place cut cauliflower in a large bowl and set aside.

Mix garlic, Olive Oil, Balsamic Vinegar, salt, and pepper together in a small bowl. Pour the mixture over the cauliflower and toss well to coat. Spread the prepared cauliflower on the baking sheet and bake for 20 minutes, or until tender-crisp; keep a close eye on things as they bake, as the Balsamic can burn if it is roasted for too long. Taste for seasoning and serve.
