Oven Roasted Cauliflower


5 or 6 cups cauliflower florets, about 1 ½ inches in diameter

¼ cup Harvest Ultra Premium Olive Oil of your choice

1 tbsp. sliced garlic

2 tbsp. lemon juice (or try Harvest Sicilian Lemon Balsamic)

1 tsp. salt

½ tsp. black pepper

2 tbsp. grated Parmesan

Chopped chives for garnish


Heat oven to 500 degrees. Place the cauliflower florets in a large sauce or roasting pan. Drizzle with olive oil and season with the garlic, lemon juice and salt and pepper. Place the sauté/roasting pan in the oven and cook for 15 minutes, stirring occasionally to ensure even roasting. Remove from the oven and sprinkle with Parmesan. Garnish with chopped chives and serve immediately while still warm.
