Quinoa & Black Bean Salad

Quinoa & Black Bean Salad


2 tsp Harvest Cilantro & Roasted Onion Olive Oil

1 small onion, diced

3 cloves garlic, diced

3/4 cup quinoa

1 1/2 cups vegetable broth

1 tsp cumin

1/4 tsp cayenne pepper

Salt and pepper, to taste

1 14.5-oz can black beans, drained & rinsed

1 cup corn (frozen or fresh)

1/2 cup cilantro, chopped


Heat oil in pan over medium heat; cook and stir onion and garlic until lightly browned, 5-7 minutes. Add quinoa into the onion mixture and cover with broth. Season with cumin, cayenne, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer until quinoa is tender and broth is absorbed. Stir corn into the pan and continue to simmer until heated through, about 5 minutes. Mix in the black beans and cilantro. This tastes great warm or cold.
