Salmon with Mushrooms

Salmon with Mushrooms


4 Tbs Harvest Wild Mushroom & Sage Olive Oil, divided

3 cloves garlic, crushed

3 shallots, finely sliced

1 tsp ginger, grated

4 skinless salmon fillets

1 Tbs Harvest Toasted Sesame Oil

2 cups sliced fresh mushrooms

Chopped cilantro for garnish, optional


Heat 2 tablespoons of the Olive Oil in a skillet over medium heat; add the garlic, shallots, and ginger, and cook about 1 minute. Add the salmon fillets and cook about 3 minutes per side, or to desired doneness. Remove the fillets and set aside.

Wipe out the pan with a paper towel before heating the remaining Olive Oil and Sesame Oil in the pan over medium heat. Add the mushrooms and cook, stirring, for 3 minutes. Spoon the mushrooms over the salmon and garnish with cilantro.
