Sesame Ginger Cucumber Salad

Sesame Ginger Cucumber Salad



2 medium cucumbers, sliced thin

Sea Salt

1/4 cup red onion, sliced thin

1 T. toasted sesame seeds

2 T. chopped cilantro

Place the sliced cucumbers in a colander. Sprinkle sea salt over the cucumbers and leave them to drain while making the vinaigrette. Rinse cucumbers and pat dry with paper towels before adding to the salad.


Sesame Ginger Vinaigrette:

2 T. Harvest Toasted Sesame Oil

1 T. Harvest Ultra Premium Olive Oil

1 T. Tamari or Soy Sauce

4 T. Harvest Honey Ginger White Balsamic

1 clove garlic

Pinch or two red pepper flakes


Mix all ingredients and whisk to emulsify. Mix the finished vinaigrette with the prepared cucumber, onions, 1/2 the sesame seeds and 1/2 the cilantro. Sprinkle the remaining cilantro and sesame seeds over the top of the salad for a beautiful presentation. Chill and serve.
