Slow Cooker Harissa Chicken

Slow Cooker Harissa Chicken


1 1/2 lbs boneless, skinless chicken breast

1/3 cup Harvest Harissa Olive Oil

1 16-oz jar roasted red peppers, drained

2 large cloves garlic, smashed

1/2 yellow onion, vertically sliced

2 tsp ground cumin (more to taste)

Salt, to taste

Tzatziki Sauce, for serving (recipe here)

Cooked rice or couscous, for serving


In a blender, process Olive Oil, garlic, and roasted red peppers until smooth. Season chicken breasts with salt and cumin. Scatter onion pieces on the bottom of a slow cooker, and place chicken on top; pour Harissa-pepper-garlic mixture over the top. Cover and cook on high for 2 hours.

When cooking is completed, turn off slow cooker and remove chicken to a cutting board to cool slightly; reserve sauce. Shred chicken with your fingers or two forks and return to sauce, stirring well. Serve with rice or couscous and a healthy dollop of Tzatziki. (This also makes a great stuffing for a pita or burrito.)
