Slow Cooker Quinoa, Chicken, & Kale Soup

Slow Cooker Quinoa, Chicken, & Kale Soup


2 boneless, skinless chicken breasts

1 medium onion, chopped

3 stalks celery, chopped

5 garlic cloves, crushed

2 Tbs Harvest Ultra Premium Olive Oil

3/4 cup dry quinoa

1/2 tsp dried thyme

1/2 tsp dried rosemary

8 cups low-sodium chicken or vegetable broth

1 can Great Northern or cannellini beans, drained and rinsed

4 cups kale, ribs removed and roughly chopped

3 Tbs fresh parsley, chopped

2 Tbs fresh lemon juice

Salt and pepper, to taste


Place chicken, onions, celery, and garlic in slow cooker and drizzle with Olive Oil. Add quinoa, thyme, rosemary, and broth, and season to taste with salt and pepper. Cover and cook on high for 4 hours or low for 7-8 hours.

Remove chicken to a plate and let rest 10 minutes before shredding it or cutting it into bite-sized pieces; return to soup. Add beans, kale, parsley, and lemon juice. Cover and cook another 10-20 minutes until kale has reached desired doneness.
