Preheat oven to 325 degrees and line a cookie sheet with parchment paper. In a small bowl, whisk dry ingredients together and set aside.
Heat Olive Oil in a non-stick skillet over low heat. Add spices and cook, stirring constantly, 3-4 minutes. Place nuts in a medium bowl, drizzle with spiced Oil, and toss well to combine.
Spread spiced nuts on cookie sheet and bake 15 minutes. Remobe to another bowl, sprinkling with more garlic salt if desired. Let nuts rest for 2 hours and store in airtight container.
