Spinach Potato Pancakes


1 medium potato, washed, peeled, boiled, and chopped

1 medium onion, washed, peeled, and roughly chopped

1 cup spinach, washed and chopped

2 Tbs all-purpose flour

2 eggs

2 Tbs garlic, minced

Salt and pepper, to taste

Harvest Ultra Premium Olive Oil, for frying (see note)



In small bowl, mix all ingredients except Olive Oil until well combined, and divide into six equal parts. Heat enough Oil to coat a heavy-bottomed skillet over medium heat. Flatten mixture into small patties and add to skillet; flip patties when slightly brown on one side, 3-5 minutes, and repeat on second side until browned and cooked through, another 3-5 minutes. Transfer to a paper-towel lined plate to drain and sprinkle with salt while still warm.

Note: Any flavor of Harvest Oil will work well here; our favorites include Chipotle, Butter, Rosemary, and Lemon.
