Tuscan Kale Salad

Tuscan Kale Salad

Ingredients:

¼ cup Harvest Tuscan Herb Olive Oil
2 tbsp. fresh lemon juice (or try Harvest Sicilian Lemon Balsamic)
1 tsp. Dijon mustard
2 cloves garlic, minced
4 to 6 cups kale, loosely packed
2/3 cup freshly grated Parmesan cheese
Salt and red pepper, to taste
Garnish with salad toppings of your choice!

Directions:

Whisk together lemon juice, Harvest Ultra Premium Olive Oil, garlic, salt and pepper. Pour over kale in a serving bowl and toss well. Add cheese and toss again. Let kale sit for a minimum of 5 minutes before serving.  Add optional toppings as desired.
